Lemon Dill Salmon Croquettes (WW, Gluten free, Pantry Meal)

Looking for a delicious meatless recipe this Lenten season? Tuna and Salmon have light flavors and are both great to sub in for chicken or beef in your family recipes. Here’s a delicious recipe using StarKist Salmon Creations: Lemon Dill Salmon Croquettes. This is actually my mother’s recipe from when I was growing up. Croquettes are a fancy word for patties! This version is fully gluten free and if you are following WW, each patty is 2 SmartPoints, and I serve two patties for each person.

Everyone in your family will enjoy these Salmon Croquettes and they’re packed with protein! My 12 year old daughter is a Pescatarian so for the last few years, we’ve been eating a lot more fish. I like StarKist Creations a lot, with 25 flavors, these pouches are so convenient – just tear, eat, and go (no draining required). They can stay in your pantry without refrigeration and you only need eggs and gluten free bread crumbs. The eggs and bread crumbs hold the salmon patties together.

Ingredients

2 StarKist Salmon Creations Lemon Dill Packets
1 Egg
¼ Cup Gluten-Free Bread Crumbs
½ Chopped Onions
Olive Oil Spray or Light Olive Oil (to taste)

Instructions:

Mix all ingredients together.

Making the Salmon Croquettes

Form into 4 patties.

Forming Patties

Use spray oil or light olive oil to coat your pan. Let pan heat up and then place your patties in your pan and cook on both sides for 5- 7 minutes until golden brown. Serve!

Golden Croquettes

If you don’t like onions, leave them out! I like to serve this with salad.

If you can only get your hands on canned salmon, this recipe will still work well. If you are using the 14 oz can of salmon, just double the recipe ingredients. If you use the can that looks similar to a tuna can, add a smidge more breadcrumbs.

WW SmartPoints Info:

The points in this come from the breadcrumbs. Each patty is 1 SP and two would be a serving. If you use 2 pouches, 1/2 cup GF bread crumbs, two eggs and the oil spray, it would be 8 SP, and four patties are made. If you ate two patties, that’s 4 points, so 2 SP per patty. If you use olive oil or another oil, you would have to count that into your recipe. I use oil spray.
