Lactose Free Cream of Broccoli Soup (Instant Pot Recipe)

I started having lactose sensitivity four years ago. While I can still enjoy certain cheeses, milk was out. I could only take it in baked goods. No more creamy soups, no more puddings, no more mashed potatoes. It changed the way I cooked, because getting sick just wasn’t worth it. I had to say goodbye to a lot of the recipes I liked, or I had to abstain when I made them for my family. I had tried several brands of lactose free milks, but I wasn’t thrilled with the taste. Recently, I was asked to check out DairyPure’s line of Lactose Free milks. We already buy DairyPure regular whole milk for our children, so I was excited that they have several kinds of 100% Lactose Free milks. My kids couldn’t even tell the difference in taste at all and they are heavy milk drinkers (I didn’t tell them that the milk was lactose free).

My recipe is based on a recipe from old edition of Parents Magazine (circa 2005 or 2006), with a few changes.

Lactose Free Cream of Broccoli Soup ((Instant Pot Recipe)

You’ll need: 

2 tbsp olive oil (you can sub in butter)
1 onion
1 package frozen broccoli (1 lb)
2 1/2 cups low sodium chicken broth
Pinch of sea salt
Pinch of pepper
1 cup DairyPure Lactose Free Reduced Fat Milk

Instructions:

Chop up the onion.

Put your Instant Pot on “Saute”. Let it heat up for a few minutes and then add your onions. Stir for a few minutes until the onions become soft and translucent.

Add broccoli and stir for a few minutes.

Add chicken broth.

Put the top of your Instant Pot on, close and secure the lid, and set to “sealing” NOT “venting”.

Set the Instant Pot for 3 minutes on manual high pressure.

When the soup is done, release the pressure on the Instant Pot- remember to be careful of the steam. Transfer the soup to a blender or food processor to puree. Be careful, it will be hot. Use an oven mitt to clamp down the top of the blender.

Add soup back to Instant Pot, add 1 cup of DairyPure Lactose Free Reduced Fat Milk.

If you do not have an Instant Pot, make it basically the same way, just in a stockpot. Puree the soup and add the DairyPure Lactose Free Milk at the end.

The Results

Did it taste like the soup I used to make? Absolutely. I will be buying this from now on and I’m excited to see what else I can make. Perhaps mashed potatoes? I didn’t have any reactions and it tasted just like regular milk.

    Wait! WHAT!?? Why did I think Lactaid was the only brand of lactose free milk out there?? Gotta see if my local grocery store has this! One of my kiddies seems to have an issue with lactose :/ Also, this recipe sounds delish!

    I’ve seen this brand at the store, but never tried it. Now that I’ve read your review, I’ll be sure to check it out! We’ve been looking for lactose free alternatives lately, so it’s great to know that I can find DairyPure at my local Target.
