Homemade Chicken and Stars Soup – Instant Pot Recipe

I love making soup, especially chicken soup. And while I don’t need noodles or rice in my chicken soup to enjoy it, my kids and husband think that’s what makes it a meal. I used to spend 3+ hours on the stove, making a huge pot of chicken soup from scratch –  but since I bought the Instant Pot, I cut that down to 30 minutes and the soup is just as delicious.

The recipe I used was my recipe Chicken Soup in the Instant Pot, inspired by the Chicken Soup recipe from Everyday Instant Pot: 115 Delicious, Family Friendly Pressure Cooker Recipes by Mama Under Pressure as a guide. I add Stelline (star) pasta (it’s also called Pastina). Don’t have an instant pot? Get one! Buy from Amazon.

Ingredients:
Two 32 ounce containers of Chicken Broth (you can increase this if you need to)
Organic baby carrots
Organic celery
Yellow Onion
2-4 garlic cloves
Salt and black pepper to taste
Olive Oil to taste
1 package Stelline Pasta (or Pastina) – if you can’t find that, any small pasta like Orzo should work.

Instructions:
Cut up carrots, celery and onion.
Turn on Instant Pot and select the saute setting. Add olive oil and let the Instant Pot heat up with the lid off.
Add carrots, celery, and onion to Instant Pot and let it soften as it cooks.
Once it’s softer (around 5 minutes or so), add in all other ingredients, press the soup function and put it on for 7 minutes, high pressure.
Make sure to leave at least 3 inches of space between the liquid and the top of the Instant Pot (otherwise you’ll have a big old mess).
The valve should be set on sealing. Close the lid.
When the Instant Pot is done, use the quick release method to release the pressure (ie. turn the dial to let the steam out). Be careful, you could burn yourself!
Add Stelline or Pastina – if you don’t have that, any small pasta will do. Close Instant Pot lid and put it on high pressure for 1 minute. Set on sealing and let it release naturally for 10- 15 minutes. Soup will still be hot, so be careful opening the lid!

Serve.
You may have to thin out the soup over the next few days by adding some more broth or water when you heat it up.

    How much chicken? Frozen or thawed? It doesn’t say anything about the chicken…

      Hi, Since this is supposed to be like the Chicken and Stars soup you buy, I normally don’t add fresh or thawed chicken, I use broth. However, if you had some cooked chicken breast in the house or rotisserie chicken, I’d add it right before you serve it.     In the recipe it says “add all the other ingredients….you need to add pasta before you close the lid to seal.” Then after the 7 minutes are up and you quick release you then say that you have to add the pasta and then high pressure for 1 minute with 10-15 minutes NPR. So when exactly do you add the pasta?

      So sorry – I updated the recipe. The pasta should be added in that last step. Not in the beginning.

    Where it says “add all the restaurant of the ingredients” it means all BUT the pasta!

      Pasta should be added for the Chicken and Stars soup before you cook it. Sorry if there was confusion, I just clarified that.
