Sweet & Spicy Cheesy Gluten Free Cornbread

When you are entertaining, you want to have a variety of flavors and spices. Some people can’t get enough of spicy things, some people prefer the sweet. This cheesy cornbread muffins uses both — by using a sweet cheese and a spicy cheese. And it’s gluten free! We used Sincerely, Brigitte cheeses in this.

Sincerely, Brigitte cheeses is made using non-animal sourced microbial rennet and starters and all natural vegetarian ingredients, and they only use premium rBST-free milk sourced from only small Wisconsin dairy farms. The flavors are bold and intense and will spark the curiosity of the most discriminate cheese aficionado. Plus — they have a cheese for literally everyone — every tastebud will be happy.

We recently made a scrumptious zucchini artichoke flatbread with their tomato olive prairie jack cheese and their garlic basil cheese.

To make this recipe, you’ll need any gluten free cornbread mix (I used Trader Joe’s). If you aren’t gluten free, any cornbread mix will do. If you want to make your cornbread from scratch, we found some recipes on yummly for you — http://www.yummly.com/recipes?q=cornbread.

Sweet & Spicy Cheesy Gluten Free Cornbread

Ingredients:

1 box of gluten free cornbread
1/2 block Sincerely, Brigitte Jalapeno Cilantro Cheese

1/2 of the package of Sincerely, Brigitte Orange Ginger Cheese
1 egg
3/4 milk
1⁄2 cup oil (use canola or vegetable oil)

Directions:

Make cornbread according to directions. Split batter into two bowls. Add 1/4 of the grated Jalapeno Cilantro cheese block to the mix and stir. Then pour batter into silicone baking cups and top with  1/4 of the grated cheese.

Take the remaining batter and add add 1/4 of the grated Orange Ginger cheese to the mix and stir. Then pour batter into silicone baking cups and top with 1/4 of the grated cheese. Bake in a 375ºF oven for 20-25 minutes
