Zucchini Artichoke Flatbread with Tomato Olive Jack Cheese

This is totally the season.. for entertaining! Here’s a delicious flatbread pizza recipe that is perfect for a crowd and won’t take that long to put together. It’s so easy (and delicious) to make for guests.

Zucchini

You’ll need Sincerely, Brigitte‘s Tomato Olive Prairie Jack Cheese and Garlic Basil Prairie Jack Cheese.

Ingredients: 
Tomato Olive Prairie Jack Cheese from Sincerely, Brigitte
Garlic Basil Prairie Jack Cheese from Sincerely, Brigitte
Veggies –  I used zucchini and eggplant.
Sun dried tomatoes
Artichokes (jarred artichoke are fine)
Flatbread (I used a pizza shaped Ciabatta bread)

1. Shred your cheese and set aside. Grill your veggies — I used zucchini and eggplant. Just add some olive oil to a grill pan and let your veggies get those great grill marks.

2. Warm up your flatbread in the oven for a few minutes at 4:25. Then brush some olive oil on the flatbread and place your veggies on.

3. Add your sun dried tomatoes and artichokes. Then add your cheese on top (I used both the Tomato Olive and the Garlic Basil Prairie Jack Cheeses).

4. Bake for 10 minutes at 425 degrees. Serve slightly warm.

Before I chose the cheese that I wanted to add to this flatbread, we held a little taste test. Well, a big taste test, since Sincerely, Brigitte has a lot of flavors to try — they’re bold and intense. Plus anyone who is a cheese fan is going to love them. Their cheeses are made using non-animal sourced microbial rennet and starters and all natural vegetarian ingredients, and they use only premium rBST-free milk sourced from only small Wisconsin dairy farms.

As someone who tries to eat healthy as possible and prefers to serve all natural foods to my family, I was really pleased with the ingredients in Sincerely, Brigitte cheeses. You can understand all the ingredients in Sincerely, Brigitte’s products – no scary chemicals or unpronounceable ingredients. I will be buying much more of Sincerely, Brigitte in the future, for that reason.

Sincerely, Brigitte sent us 9 flavors; Tomato Olive Prairie Jack Cheese, Blue Marble Cheddar, Tarragon Ginger, Chipotle Cheddar, Wasabi Ginger, Parsley Chives, Garlic Basil, Jalapeno Cilantro, and Orange Ginger.

See what my kids thought.

My favorite was the Garlic Basil and the Jalapeno Cilantro. I love garlic and this had good flavor, without it being overpowering. The Jalapeno Cilantro had a subtle heat without it being “too spicy”.
