WW Strawberry Muffins

If you are craving a crazy delicious muffin right now, I’ve got you covered with these WW Strawberry Muffins, which are only 2 WW SmartPoints. You’ll need Pillsbury Sugar Free Vanilla Cake Mix, strawberries, a can of pumpkin puree, some water, and 3 eggs. Read on to see how to make this deliciousness, that will keep you on the plan (I use Blue) and take care of any sweet cravings.

Strawberry Muffins (WW Recipe)

If you would prefer to use another fruit, go ahead! I’ve made this with blueberries and it comes out absolutely delicious. But since I found strawberries in my grocery store this week, I decided to make strawberry muffins. I use the Vanilla Sugar Free Cake mix — find that at either Walmart or any supermarket (look on the bottom shelf in the cake mix section, you should be able to pick it up). You’ll need 2 muffin pans (or be able to wait until the first batch is done before you make a second batch. I like this one.

If you want, you can find the Pillbury sugar free chocolate or vanilla frosting (remember to add points) or melt some chocolate chips and schmear on top. Or even add some fat free whipped cream!

Ingredients:

Vanilla Sugar Free Cake Mix
Pumpkin Puree
3 Eggs
1/2 cup water
2 Cups sliced Strawberries (I cut in small pieces)
Cupcake liners

Strawberry Muffin Ingredients


Instructions:

Add the cake mix to a bowl.
Add in a can of pumpkin puree, eggs and mix well.
Add water slowly. If you want, you can leave it out entirely, but thinning out the batter yielded 24 cupcakes, which makes it 2 WW SmartPoints per muffin.
Add in strawberries. Mix well.

Put in cupcake liners and fill each muffin cup around half-way.

Bake at 325 for 31 minutes, testing with a clean butter knife to make sure that they are done.
These are super super moist, so I like to leave them out to cool and dry out a little.
