Grandma Roz’s Gluten Free No Crust Apple Pie

My mother loves to make this no crust apple pie recipe, handed down from my father’s mother, Rosalind Johnson (who passed away in 1986). Because my husband was diagnosed with Celiac in the spring, I subbed in gluten-free flour (Bob’s Red Mill 1-1) and added in certified gluten free oats as a fun thing. Because Covid-19 is keeping us all home and away from our families this year, my daughter decided that she wanted us to make this no crust apple pie (in a gluten free version so my husband who was diagnosed with Celiac in March could enjoy it).

Ingredients:

1 cup Gluten Free Flour (I used Bob’s 1-1 GF Flour, but if you are not gluten free, all purpose flour will work)
Optional: 1/2 cup of gluten free oats
2/3 cup sugar (you can cut the sugar down slightly if you want)
1 stick butter, softened (or use the equivalent in vegan butter)
Apples (we used 8 McIntosh Apples)
Lemon Juice (to taste)
Cinnamon (to taste)

Instructions:

Preheat oven to 450 degrees farenheit.
Peel and slice apples into a 9 inch pie plate. Place in a bowl of water until you’re finished and ready to place in a pie plate.
Use as many apples as you want and make a mound around 2 inches higher than the rim of the pie plate (your apples will sink down).
Sprinkle on lemon and cinnamon to taste.

In a bowl, add the gluten free flour, oats (this is an addition to my grandmother’s recipe), sugar, and the soften butter. Mix with your hands.

Place this mixture on top of your apples and spread it out to cover the top.

Pie before oven


Bake at 450 degrees farenheit for 15 minutes and then lower temperature to 350 and bake for 45 minutes more until the crumb topping is nicely browned.
Let the pie cool.

You can top with whipped cream or vanilla ice cream.

The pie came out absolutely delicious! You cannot tell that the version with the gluten free flour and oats was gluten free, it tasted just like my mother’s pie (which is not gluten free).

  • 1/2 cup Gluten Free Rolled Oats Can use regular rolled oats if you don't want to make this gluten free
  • 2/3 cup Sugar You can cut the sugar down slightly if you want
  • 1 stick butter, softened (or use You can sub in the equivalent in vegan butter, I like Earth Balance
  • 8 Macintosh or Gala apples, pared and chopped
  • Lemon Juice (to taste)
  • Cinnamon (to taste)

    Thanks for sharing this recipe from your grandma. I have fuji & granny smith apples, that would go great in this recipe. I will definitely be trying this soon.
