Crispy Matzoh Meal Pancakes Recipe

If you’ve been searching for what to do with your leftover matzoh meal or if you were looking for a passover friendly pancake recipe, this is for you! This is my mother-in-law’s recipe and it came out so delicious that my kids asked for seconds (and they never do that). The matzoh meal used was kosher for Passover, as an FYI. You can either make this sweet by adding sugar, jelly, or syrup to top if afterwards, or have it more like a savory latke (and add applesauce if desired). It will come out amazing, any way that you serve it. Make sure you have a good stainless steel pan!

Growing up, my mother made Matzo Brei and while I love that also, these matzoh meal pancakes were so delicious! Plus, with picky eaters, they were more likely to eat these pancakes because they looked more like the pancakes I make.

Ingredients

3 eggs, beaten
2 cups matzoh meal (if you make it during Passover, make sure you use the Kosher for Passover version)
2 1/2 cups water (you may end up using either a little more water or a little less)
Olive Oil or oil spray

Instructions

Beat the eggs first.
Add the matzoh meal.
Slowly add the water, reserve the last 1/2 cup and add as needed.
Mix everything together.
You want this to be more of a pancake consistency.
Let the batter rest around 3 minutes and then heat up a stainless steel pan with some oil or oil spray.

Be generous with your oil, it will be like making latkes rather than pancakes (the more oil the better).
Take a spoonful or two and make it like a pancake. Let it brown and flip it over and brown the other side.
Serve!

Since we were out of straight matzoh meal, I used matzoh ball mix with this — since it had salt and pepper added, I made these as savory. They were so good!

Sweet Topping ideas:

Sugar (powdered sugar may work best)
Fruit Spread (strawberry or cherry is my fave)
Nutella or Israel Pareve Chocolate Spread
Maple Syrup
Satueed apples with cinnamon

Savory Topping Ideas

Mushrooms and spinach, perhaps with a sunny side egg on top
Hummus/tahini
Chopped nuts

Note: If you make it during Passover, make sure you use the Kosher for Passover version!

    My mama and grandma made these delicious pancakes at all the Jewish Holidays. When ever they put up a pot of delicious chicken soup or matzo ball soup, the farfaral pancakes were served before, during, and after. My mama passed in 2016 and was in a wheelchair before that. One of her last dinners, so had made over 125 of them. She was so elated we enjoyed them but was so upset that the pancakes and soup were all we ate.

      Yes, look in the ethnic food section. We always have tons left over after Passover, and these were so delicious.
