Air Fryer Grilled Shrimp Bowls with Veggies and Rice

Love shrimp and veggies? My family is wild about shrimp and usually we make shrimp with pasta, but I felt it was time to try it another way. So I pulled out my beloved Instant Pot and made brown rice while I cooked shrimp in my air fryer and sauteed veggies.
Raw shrimp cooks really quickly in the air fryer, so keep this in mind while you prep your dinner. While you could use pre-cooked shrimp, I feel the taste is better when you cook it from raw. Feel free to sub in any veggie that you want. We picked avocado, spinach and mushrooms. To finish this dish, add some tahini sauce. These air fryer Shrimp Bowls with veggies and rice is a total crowd pleaser!

You’ll Need

Shrimp (2 lbs) – I use frozen uncooked shrimp
Baby spinach (1 small package)
Mushrooms (1/2 package)
Brown rice or rown basmati rice – 1 cup
Veggie broth – 1 cup
Olive Oil Spray or olive oil
Garlic powder or minced garlic
Za’atar Spice Blend or any spices you wish
Avocado -1
Tahini
Lemon Juice – to taste

The first step is to make rice.

Rice


Start your rice. I usually either make brown rice or brown basmati rice. To make brown rice in your Instant Pot, add 1 cup liquid to one cup brown rice. I rinse the brown rice and use broth as my liquid. You can use water if you don’t have any broth.


Put on your Instant pot for 15 minutes and then after it’s done, let it sit for 15-20 minutes (natural release). Or if you want brown basmati rice, follow my recipe here: https://www.themamamaven.com/how-to-make-brown-basmati-rice-in-the-instant-pot/

Preparing the shrimp

Shrimp

I buy raw frozen shrimp and keep it in my freezer until I need it. I defrost a half hour or so before I need it, placing the shrimp in cold water and then peeling off the shell. Note: This can get smelly! After the shrimp was defrosted, I placed it on my air fryer’s baking sheet, sprayed with olive oil non-propellant spray and added spices. I used Za’atar blend, you can use anything you like. You can also use regular olive oil. Make sure both sides are coated. Cook at 400 degrees farenheit for 6 minutes, turning over at 3 minutes in.

Veggies

You can pretty much use any veggies — I decided to use mushrooms, baby spinach and avocado. I sauteed the mushrooms first, in some olive oil spray and then I sauteed the spinach. I cut up the avocado and everything was placed in a separate bowl so my family could choose the veggies they wanted.
