Strawberry Peach Baked Oatmeal

Baked oatmeal has been my go-to breakfast for the last month or so. It’s filled with fiber and deliciousness. This Strawberry Peach Baked Oatmeal easily comes together in one bowl and is then baked. It contains strawberries, peaches, banana, coconut (to top), walnuts, eggs, oats, milk. Feel free to get creative and sub in the fruit or nuts of your choice. This is wonderful for meal prep and will stay good for the week. With working out of the house and remotely, I love having my breakfast already made in my fridge. Heat up a piece and set your day up for success (because your stomach won’t be growling!). Strawberry Peach Baked Oatmeal will soon be your favorite meal prepped breakfast!

Strawberry Peach Baked Oatmeal

You’ll Need

What you need to make this – but forgot to add the eggs in this photo!
  • 2 cups rolled oats
  • 1 3/4 cups milk (I used lowfat)
  • 1 banana 
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon cinnamon
  • 1 1/8 cup strawberries
  • 1 cup peaches (I used frozen)
  • 2 tablespoons chia seeds (optional)
  • 1/4 cup chopped walnuts (optional) 
  • 1/4 cup coconut shreds (unsweetened)
  • Oil spray or olive oil to grease the pan

Instructions

Preheat oven to 375°F (190°C).
Combine all ingredients in a bowl.


Mix together well. What I like about this recipe is that you mix everything together in one bowl and then pour it into your baking pan. I prefer Pyrex because I can add a lid and store it in it all week. I just cut my piece and then either warm it up and enjoy it or pack it for breakfast on the go. Remember to add a cutlery set!

Pour into a greased baking dish. I sprinkled the coconut on top. Nuts will also taste delicious in the baked oatmeal and on top! I used walnuts for this, but any nut will work.

Bake for 50 minutes or until set. Some people may like to enjoy baked oatmeal like a cake, if you don’t and prefer it more oatmeal-like, baked for a little less time.

This will stay delicious in your fridge for 4-5 days!
I’ve topped this with whipped cream or more cinnamon. Any way, it’s a keeper! Strawberry Peach Baked Oatmeal will instantly become a meal prepping favorite for breakfast.

  • Oven
  • large mixing bowl
  • pyrex baking dish

Ingredients
  

  • 2 cups rolled oats

Allergies

If you have allergies, you can sub out the ingredients that you may be allergic to. Nut milks or alternative milks like oatmilk or soymilk can easily work in this. You can leave all nuts out if you wish to.
