Sheet Pan Dinner: Roasted Lemon Cod and Broccoli (Gluten Free)

I love a good sheet pan dinner, don’t you? They are easy and nutritious! As a busy working mom and wife, I need easy recipes in my life! This sheet pan dinner: roasted lemon cod with broccoli is delicious and you can serve it with brown rice or pasta (use your Instant Pot to cooking the rice easier). Plus if you use an olive oil spray, it can be very WW friendly too! This is naturally gluten free, as my husband has Celiac, so our family dinners are always gluten free now – but as a rule, make sure your olive oil spray does not contain gluten. The brand that is my go-to – Pompeian, is naturally gluten free.

Sheet Pan Dinner: Roasted Lemon Cod and Broccoli

This is very kid friendly, for my kids, I removed the lemon before I served it.
If you are short on time, buy broccoli that is already cut up and buy frozen rice (or make it beforehand). I usually put my brown basmati rice and cook it in my instant pot around 10-20 minutes before I start prepping my sheet pan dinner so I give my Instant Pot enough time to come to pressure and cook my rice.

Ingredients:

Cod (I usually use frozen and thaw it out)
Salt
2 Lemons
1 to 1.5 cups Lemon Juice
Broccoli, cut into pieces or buy it already cut up
Olive oil cooking spray or Olive Oil
Mediterranean Seasoning – if you can’t get that, use some oregano, garlic, rosemary, fennel seeds, and thyme
Brown Rice (make in your instant pot or buy frozen or instant)

Instructions:

Thaw your cod pieces – I usually have one piece each for my kids and two pieces for my husband. The pieces look small, but cod is very dense. If you have time, follow the directions for thawing on your cod’s package. Otherwise place the frozen fish in a ziploc and let it sit under cold running water.
Preheat your oven to 395
Prep a sheet pan, I usually put tinfoil and put parchment on top
Spray sheet pan with oil spray or drizzle with olive oil
Place thawed cod on the sheet pan

Add some kosher salt
Add some pepper
Squeeze one lemon over your cod or add another cup of lemon and pour over it (if you are short on lemons but have lemon juice, add 1/2 more cup of lemon juice
Add some spices – I like Mediterranean Seasoning – if you can’t get that, use some oregano, garlic, rosemary, fennel seeds, and thyme.

Cut up the other lemon and place the slices on your cod.

Wash and cut up your broccoli (or buy it already cut up)
Spray broccoli with olive oil spray or olive oil
Add 1/2 cup of lemon juice over the broccoli, more if you like it really lemony
Can sprinkle more mediterranean seasoning and kosher salt over broccoli

Place cod and broccoli into oven.
Bake at 395 degrees Farenheight for 7-8 minutes – flip over. Spray broccoli with more oil spray or drizzle with more olive oil and and cook for 9-11 minutes more.

Roasted Lemon Cod and Broccoli
