Super Quick Dinner: Chunky Tomato Sauce Over Penne

Make Chunky Tomato Sauce over Penne!
The Folks at Red Gold had sent me some of their Red Pack branded canned Tomatoes, so while my kids were eating their dinner (most of the time we are a two or three dinner household), I whipped this up.

Since I really do use the brand and try to keep diced tomatoes in my pantry to cook with, I was excited. Plus,  I’ve had sick kids home with me and couldn’t get to the grocery store all week – so there wasn’t more than pasta for our dinner. I immediately opened the cans and started prepping our meal. It was too late to serve it to my kids, but my husband and I were starving!

2 cans Red Pack Diced Tomatoes
1 can Red Pack Crushed tomatoes
3 cubes of garlic (we buy Dorot)
Add spices (oregano, basil, to taste)
Onions (I used frozen), you can also add other veggies to this — you could even add meat or tofu
Olive Oil — I spray it from a Misto

1. Spray pot with oil, add frozen garlic cubes (you could use fresh or minced jarred). I used two cubes and then added one later.

2. Add Diced Tomatoes with juice.

3. Add Crushed Tomatoes

4. Add spices to taste

Let it simmer for around 10-15 minutes. Serve over pasta (we used Trader Joe’s High Fiber Penne).

Top with Parmesan and enjoy! If you are serving this to your picky eater, add veggies and protein (either hidden or out in the open).

I didn’t need to add any salt — and we loved that the tomatoes had low sodium (both in the diced and in the crushed).
