Air Fryer Eggplant Parmesan Rounds (Gluten Free)

Love eggplant parmesan and have an air fryer? This recipe post is for you! Last summer I made an easy baked eggplant parmesan, which was delicious. This time I used my air fryer and it was next level! The air fryer makes everything so crisp and light. I used gluten free breadcrumbs, as my husband has Celiac, so he could enjoy it also. I made this as eggplant parmesan rounds. If you wanted it to be a more traditional eggplant parm, you could put all this together, use more marinara sauce and cheese and pop it into your oven or your air fryer in an oven proof dish. Enjoy this dish of Air Fryer Eggplant Parmesan Rounds (gluten free)!

Ingredients:

2 Jars Marinara Sauce (I used Barilla since I knew it was gluten free)
Reduced fat mozzarella cheese – 2 lb package
2 eggplants
3 eggs (or use liquid egg whites)
Oil spray or olive oil
Gluten free breadcrumbs (use regular bread crumbs if you aren’t gluten free) – use to taste
Parchment paper (optional)
Aluminum foil
Gluten Free Pasta for serving on the side

Eggplant Parm Rounds

Instructions:

Set up a little assembly line with the 3 eggs, beaten, and the gluten free breadcrumbs. I love using my pyrex dishes for this. And when I cook, I like to have everything laid out so it’s easier to make the magic happen.

Peel and then cut up your eggplant into large 1 inch thick rounds.

Dip the eggplant rounds into the egg mixture first.

Then dip the eggplant rounds into the gluten free breadcrumbs to cover fully. The gluten free breadcrumbs we usually use are the 4C brand. If you like panko, you’ll love 4C’s Gluten Free Breadcrumbs.

Place on large cookie sheet until you are ready to put it in your air fryer. Most likely your airfryer is on the smaller side or a basket version and you’ll need the space so you can do several rounds in the airfryer.

When ready, place your rounds in the air fryer – you may need to lightly spray them with olive oil spray or a few drops of olive oil (I also spray the parchment paper I put them on – on top of aluminum foil). The oil spray/oil will help them act more like the fried versions.

Air Fry at 400 degrees for around 25 minutes, flipping over at the 12 minute mark.
Once all your rounds are done, add a tablespoon of sauce.

and a sprinkle of mozzarella cheese.

Place them back in the air fryer at 400 degrees for 1-2 minutes.
