
I could not love this recipe more! These Oatmeal Chocolate Chip Energy Bites taste delicious and are a little healthier than regular cookies! Have fun and make them with your kids for a delicious snack! These are vegan, but
- 1 cup organic rolled oats
- 1/2 cup organic ground flaxseed meal
- 1/3 cup maple syrup
- 1/2 cup non-dairy chocolate chips
- 1/2 cup smooth peanut butter can substitute almond butter
- 1 tbsp vanilla extract
- Can also add in nuts cinnamon, raisins, etc
Instructions:
Add together all ingredients in a big bowl and mix. It will be very sticky – kids will love helping! Form into 1 inch (in diameter) balls using your hands.
Start making your balls by wetting your hands first.
Arrange the bites on parchment paper and freeze for one hour until set. Keep in the fridge for a week or so. They will be soft and easy to eat. And delicious!
If you are carb counting, it works out to 9.5 carbs per ball

I love chocolate chip cookies and would love to make these protein energy bites, but I am not a fan of getting my hands messy so I may ask my nephew to help me with it. It would be a great treat for a birthday party and family get together.
