Layered Rainbow Salad Platter for Dinner – Great for Picky Eaters

Several years ago, my writer Maytal told me about a salad she made her family with all sorts of veggies — a rainbow, actually. Then recently another friend, Gretchen shared about the dinner salad she made her family. She talked about how she added delicata squash and boy, was I intrigued. Since my kids are very picky, I decided to try my hand at rainbow salad making. The best part? There are NO rules. Serve all the veggies you have in your fridge. While I skipped the delicata squash in this version, you can really add anything you want. I served it with a bowl of romaine lettuce (use any type you’d like) and to please my carnivore husband, I also served roasted chicken. You’ll need:

Lettuce (I prefer a darker leaf lettuce but Romaine works too)
Optional Cheese (I served feta)
Avocado
Orange Peppers
Cucumbers
Grape tomatoes (or cut up tomatoes)
String Beans
Slivered almonds
Mushrooms
Bagged Kale Salad (optional)

Instructions:

Peel and cut up each ingredient. Kids can help with this by washing veggies and if supervised, slicing up and arranging the veggies. 

Arrange on a large platter with one food next to the other. You want to make it bright and pretty so your picky eaters get interested. My youngest child is wild about mushrooms and cucumbers, so I always make sure that I have them in our salads.

Other options: add turkey, cubed grilled chicken, cubed cheddar, sunflower seeds, roasted delicata squash, hard boiled egg slices, pepitas (pumpkin seeds).

Can you think of some more? There is no wrong way to make a rainbow salad — so let me hear your ideas! 

I didn’t count carbs for my Type 1 Diabetes son with this, I just estimated about 10 carbs and considered this a lower carb dinner (counting in the chicken as no carbs). Remember if you use dressing to check the carb count.
