Dairy Free Earl Grey Tea Infused Bread Pudding Recipe

I was pretty intrigued when Pique Tea contacted me — I am a big tea fan and their method was very different. I wondered how their teas would taste. Plus, who would say no to more flavor and antioxidants?
I love to enjoy a cup of black tea or green tea (you need to make sure it’s the best green tea – Sencha green tea) to start off my day. It calms me and I feel like I can tackle my day better. The first tea I tried from Pique Tea Crystals was the Mint Sencha Green Tea. I warmed 8 oz of water and added the tea crystals and stirred. I added a little agave for sweetness and let my day start. It was probably the best green tea that I’ve ever had. Later, when I went out with my kids for the day, I made another cup of green tea and then added ice and agave to a stainless steel bottle and took it with me.

How is Pique Tea Crystals different? They source their tea from trusted farmers in India, China, and Sri Lanka, who grow and handpick tea leaves at the peak of their freshness. Tea can be delicious when you incorporate it into a recipe. I love Earl Grey tea because it has such a distinct flavor. I found a basic bread pudding recipe (since I had never made a bread pudding before) from Mark Bittman and changed it to make it dairy free and added Earl Grey Tea Crystals from Pique Tea to give it a subtle, smokey sweet flavor. Earl Grey Tea Infused Bread Pudding (Dairy Free)

Ingredients:
2
 cups coconut milk
2
 tablespoons (1/4 stick) plant based buttery
Coconut Oil for greasing pan (or a non-propellant coconut oil for greasing your baking dish)
1
 teaspoon vanilla extract
3 Earl Grey Packets from Pique Tea
⅓
 cup organic sugar
Pinch of salt
2/3
 loaf challah or brioche, cut into 2-inch cubes (about 6 -8 cups)
2
 eggs, beaten

Instructions:

To a saucepan, add coconut milk, plant based buttery spread, vanilla extract, organic sugar, Pique Tea Earl Grey packets (you’ll need 3 to infuse the flavor) and salt.

Stir until the buttery spread melts.
Let it cool.

Temper the eggs with the coconut milk mixture. This means you want to bring the temperature up so it doesn’t turn into a scrambled egg flavor when you add it to the coconut milk mixture. You do this by slowly take a tablespoon at a time and bring the egg mixture’s temperature up to the coconut milk mixture.
Once the temp is up (you can measure the temperature with a candy thermometer, but I did it with my eye). Then add the whole egg mixture into the coconut milk mixture and stir well.
Pour over the cubed bread mixture and then place into the oven.

Bake between 30 to 45 minutes.

Serve with either shredded coconut, whipped cream, or ice cream and a glass of delicious Pique Tea!

I made it dairy free so I could enjoy it without stressing, but you can use regular milk or almondmilk if you prefer. The Earl Grey Tea Crystals from Pique Tea gave it a kind of smokey flavor. Combined with the sweet coconut milk mixture, it was absolutely scrumptious.

Ingredients
  

  • 2 cups coconut milk

    Haven’t tried a tea-infused bread pudding before but I am excited to try your recipe. Earl Grey Tea is my favorite so I am sure this pudding would taste really good! I’d serve this with toasted shredded coconut. 🙂

    That sounds like a great brand, this is the first time I’ve heard of them. I love having afternoon tea, it’s quite relaxing especially if you’ve had a stressful morning! That bread pudding looks delightful!
