Bubbe’s Easy Rice Pudding

Warm, delicious homemade rice pudding is the best~ My husband’s grandmother, Sylvia (known as Bubbe to my kids) was a terrific woman and she gave me her rice pudding recipe when I first got married. My teenage daughter asked to make it for all of us and of course we said yes! Warm rice pudding is so delicious and comforting, plus it makes your home smell amazing! The rice that should be used is Arborio, but we ended up using white long grained rice and it was still scrumptious. Here’s how to make Bubbie’s Rice Pudding.

Ingredients:

  • 1/4 cup rice (this recipe calls for white long grain rice but you can use Arborio)
  • 4 cups milk
  • 1/4 cup granulated sugar
  • 2 Cinnamon sticks
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raisins (optional)
  • Ground nutmeg or cinnamon to taste for topping

Instructions:

  1. Soak the rice in water for 1 hour.
  2. Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a pyrex glass baking dish or casserole dish with cooking spray to prevent sticking.
  3. Combine Rice and Milk Mixture: In a glass pyrex pan, combine the rice, milk, granulated sugar, vanilla extract, and cinnamon sticks. Stir the mixture well until the sugar is dissolved.
  4. Add Raisins (Optional): If you enjoy the sweet burst of raisins in your rice pudding, fold in 1/2 cup of raisins into the mixture at this point.
  5. Bake: Place the baking dish in the preheated oven and bake for approximately 2.5 hours. Remember to stir the pudding every 30 minutes to ensure even cooking and a creamy consistency.
  6. Check for Doneness: Around the 2.5-hour mark, check for doneness by inserting a knife into the center. If it comes out clean and the top has developed a beautiful golden-brown color, your rice pudding is ready.
  7. Cool and Garnish: Allow the baked rice pudding to cool for a bit before serving. Sprinkle a cinnamon or ground nutmeg on top for a final touch of warmth and flavor.
  8. Serve and Enjoy: Scoop generous portions of the oven-baked rice pudding into bowls and savor each spoonful. Whether served warm or chilled, this delightful dessert is sure to bring joy to your taste buds.
