Super Easy Potato Latkes for Hannukah (+ Air Fryer Directions)

I make perfect latkes every year… want to know how?

If you follow what I do, it will be super easy and almost effortless for you too!

You need a few things like Streit’s Potato Pancake Mix (pick the low sodium one), a few russet potatoes, water and eggs.

My mother in law, Barbara, taught me to use the mix and grate a russet potato into it. I prefer to add a few.

Follow the directions on the box — beat two eggs and then add two cups of water and then add the two packages of latke mix.
Let it rest for ten minutes and then grate 1-4 russet potatoes in it. Stir.

Cook your latkes in either olive oil or avocado oil.. I recommend a stainless steel pan, but you can use anything that you have on hand. You want to watch for them to turn a golden brown.

And then you have perfect latkes! Your family will think you slaved for hours.

I usually serve with applesauce and sour cream (or sub in plain greek yogurt like I did this time). As well as some Sufganiyot – if you cannot find proper ones, jelly donuts do the trick. This year I also made white chocolate OREOS and bought Gluten Free sufganiyot for my husband. Don’t forget the chocolate gelt (coins).

Now for me, I cooked 3 in the air fryer, as that I can’t have all the oil.

Air Fryer Latke Directions

I put it on 400 degrees for 20 minutes and flipped them a few times. They came out delicious and I would definitely make them again that way. Were they as crispy as the latkes I fried? No, they were denser but tasted so delicious that I didn’t really notice the difference.
