Grilled Chicken & Sun-Dried Tomato Pasta Salad

Looking for an easy pasta salad with protein for a quick and hearty lunch or dinner? You can quickly whip up this Grilled Chicken and Sundried Tomato Pasta Salad. You’ll need grilled chicken, cooked pasta (room temperature or refrigerated is fine), sun-dried tomatoes, and orange or yellow bell peppers. The dressing is balsamic vinegar and olive oil.

Gather your ingredients. I used whole wheat rotini pasta and I bought the grilled chicken (already made). I cut up the orange pepper. Mix the chicken, peppers, and sun-dried tomatoes into the pasta. Set aside.

Make your dressing — add together one part olive oil to one part balsamic vinegar. I apologize for not measuring this. Start with 1/4 cup of each and if it’s not enough, add more.

Whisk together and then add to your pasta salad. Mix well and serve!

Ingredients
  

  • 1 package whole wheat pasta
  • 1 package premade grilled chicken
  • 1 orange bell pepper
  • 1/2 jar sun-dried tomatoes
  • Olive oil to taste
  • Balsamic vinegar to taste

Instructions
