Baked Turkey Sausage and Peppers

I’ve mentioned before that I love Sausage and Peppers. I usually make my father’s recipe with tomato sauce – but my husband wanted a lighter version of this, so I changed things up a little. I used lean turkey sausage and baked both the sausage and the peppers and onions in a little coconut oil cooking spray. I served it over brown rice. My children (even my 2 picky eaters) and husband loved it!

Ingredients:
2 packages lean sweet turkey sausage
4 multi-colored peppers (organic if possible)
1 onion
Cooking spray
Brown Rice

Directions:
Bake turkey sausages for 20-25 minutes at 350 degrees. I use a metal pan like this in my oven. I now usually use parchment paper to line my pans.

Cut up onions and peppers

Take sausage out of the oven and let them cool. Cut up when cool.

Spray large glass pan (9×13) – I love my Pyrex long (9×13) glass pan.
Place onions, peppers, and cut up turkey sausage on top

Rice for Baked Turkey Sausage and Peppers

Bake for another 20 minutes.

Serve over brown rice. Since I don’t buy the frozen brown rice anymore because I make brown basmati rice in my instant pot, here’s my recipe link:

This rice comes out so beautifully in your instant pot. Use veggie or chicken broth for extra flavor!

    We usually sweet and spicy sausage. Turkey sausage is a healthier choice.
