Things get hectic during the week in my home and now that Back to School Season starts in few weeks, I need to be ready. I need to make sure that I have some great recipes up my sleeve that I can whip up in 30 minutes or less. I went down to my local Walmart to pick up the ingredients. I picked out Barilla Tomato and Basil Sauce first and decided to base my recipe on this. Barilla Tomato and Basil Sauce has simple ingredients, no preservatives, it’s gluten free, kosher, and made with Non-GMO ingredients. I also picked up Barilla Rotini (yep, in the blue box). Barilla has adopted the Mediterranean diet model as an exemplary method of incorporating pasta into a healthy lifestyle. The Mediterranean Diet places an emphasis on the consumption of fresh vegetables and produce. It also recommends a moderate intake of protein from lean sources primarily from poultry or fish.

Normally I would choose the penne, but I was in the mood for something different. My husband suggested that I also pick up some chicken or turkey sausage, spinach, mushrooms, and cannelloni (small white) beans. While our kids were playing, we quickly whipped up our dinner.

The twists and spirals of Rotini allow it to embrace both refined and simple sauces. Rotini is just perfect paired with light tomato sauces (with or without finely diced vegetables), dairy-based sauces, or oil-based sauces. Made with simple ingredients, Rotini has a low Glycemic Index, which can keep you fuller longer. It’s enriched with iron and B Vitamins and made with non-GMO ingredients.

Here’s my fun video how to make it.

Ingredients:

2 jars Barilla Tomato and Basil Sauce
2 boxes of Barilla Rotini Pasta (you can sub in any Barilla Pasta you wish)
1 can cannelloni beans (small white beans)
5 mushrooms, chopped
1 package chicken sausage (usually 4-5) links. I bought the already cooked.
1 bag spinach (I used baby spinach)

Instructions

Add two jars of sauce to a large stock pot. Let it start simmering a little (use a low heat).
Add the cut up chicken sausage and stir
Add white beans
Add mushrooms
Add spinach (this will completely fill your stock pot) – stir and then let the spinach cook down (for around 7 -10 minutes). When the spinach has gone down and completely in the sauce, move it to the back burner on a low simmer for another 5-10 minutes while you make the rotini pasta.

Make rotini pasta according to directions.
Drain the pasta and serve the sauce over it.

Serve to hungry family members!
Now, my kids usually don’t like red sauce. However, the smell drew them in and I couldn’t keep them away from it.

    This looks pretty good! I know it sounds strange but I have a tomato allergy so I’d have to fine an alternative to the tomato sauce, maybe pesto? Yum!

      Pesto should work nicely! You may want to saute the sausages, spinach, and mushrooms altogether (start with the sausages first), heat up the white beans (drain them first) and then add it to the pasta with the pesto. Would love to see a photo if you try it!

    Chicken is a huge hit at home especially with the kids and I’d love to give this one a try! I’m sure the chicken sausages add a lovely flavor to the recipe. I think it’s really awesome that you added beans and spinach!

    I frequently buy Barilla sauce. We have ravioli night once a week here and I love their tomato basil sauce. This looks like a very healthy and well balanced meal.

    This looks so good! we do pasta at least once a week, so I will have to try this out for next time! I love Barilla sauce too, it makes it so much easier than doing a homemade sauce on a weeknight.

    I a vegetarian but my kids and husband love sausage. We use Barilla pasta all the time but never tried their sauces. I will keep this for my husband who does the cooking most of the time.
