Black Bean and Cheese Nachos

Looking for a delicious vegetarian nachos recipe? This recipe has only 5 ingredients and is pretty simple to whip up. It’s perfect for serving during sports on TV, as an afterschool snack, or as a fun party appetizer. To make it a little healthier, I used organic blue corn chips, organic grape tomatoes, and whole canned black beans. I used a regular cheddar on this, but you can use a reduced fat cheddar.

Ingredients:
Organic Blue Corn Tortilla Chips

Cheddar Cheese (shredded) – we used white and yellow cheddar
Organic Grape Tomatoes, sliced
Rinsed can of black beans
Olive oil or coconut oil

Instructions:
Coat pan with either olive oil or coconut oil so the nachos don’t stick.
Spread out the bag of blue corn chips

Open a can of black beans and rinse under water. Spread beans on top of blue corn chips.

Shred cheese and sprinkle on nachos.

Cut up grape tomatoes.

Sprinkle cut tomatoes on top. Bake for 12 minutes at 350 until cheese is melted.

Serve. You can add salsa, guacamole, or sour cream.

    This is delicious and easy. I like it there is care to use ingredients in baking the nachos that will not cause sogginess. I used Pepper Jack cheese as well as shredded cheddar. The Pepper Jack did far better in terms of melting and smoothness. The particular kind of shredded cheddar I used mostly got a little crispy. Additives are used in shredded cheese so maybe this is a good time to grate from a block. I could see using a variety of cheeses including muenster, a really good melting cheese. After plating it, I added chopped fresh ingredients like jalepeno, onion, and lettuce. I served it with sour cream. Delicious!

    I would always order nachos at restaurants with extra sour cream.

    These are very healthy nachos! I want to make these and have for dinner for me and the kids. I like how easy they are to make and my kids would love making this recipe with me!
