We met Mary Waldner, Chairman and Founder of Mary’s Gone Crackers at the Summer Fancy Foods Show and she was absolutely delightful.
She told us about her newest crackers and mini’s cookies line. Take a look at our video:
Being newly gluten-free, my eyes lit up when I came to the Mary’s Gone Crackers Booth. I could eat EVERYTHING at the booth. That meant cookies, crackers and even pretzels (which I love)! While I am gluten-free for weight and health reasons (I do not have Celiac disease), Chairman and Founder Mary Waldner does have Celiac. Mary was a psychotherapist and learned she had Celiac disease at age 43. She started baking her own crackers and cookies and they caught on. She gave up a successful practice and started Mary’s Gone Crackers with her husband, Dale. Mary’s Gone Crackers’ products are gluten-free, vegan, dairy free, kosher, organic, non GMO, and whole grain. And most importantly, they’re delicious!
After the Summer Fancy Foods Show, a package from Mary’s Gone Crackers showed up at my door. My family helped me taste test.
Especially little Mr. S – who loved the Vanilla Minis. He has a thing for the moon, so he was excited with the moon and star shaped Minis cookies.
I didn’t feel bad giving them to him because they were healthy and lower in sugar than regular cookies. They went very well in his camp lunch this summer.
I decided to make a healthy treat for me.

Minis Vanilla Cream Sandwiches Recipe
Ingredients
- Mary’s Gone Crackers Minis Cookies – 8 Cookies
- 8 teaspoons of whipped topping I used sugar free cool whip. You can use whipped coconut cream if you want or heavy cream
Instructions
- Spoon less than a teaspoon onto one side of the Minis and then top with another mini.
- Freeze for 10 minutes to harden and serve.
- small sandwiches.
We like crackers and nuts.
