Heart-Healthy Salmon Patties - For a Quick Lunch or Dinner

A delicious main dish that goes well with a salad for a light lunch or potatoes for a heartier meal.

Ingredients
  

  • 1 canned salmon in water
  • 1 large onion
  • 3 stalks green onion
  • A handful of cilantro
  • 5 tbsp oatmeal can be GF
  • 3 eggs
  • 2 tbsp oil I use avocado oil
  • salt garlic powder and any spices you like
  • Cooking spray & avocado oil for greasing pans

Instructions
 

  • preheat oven to 425. Oil 2 pans well (I used a regular pan plus a smaller pie pan, in picture above).
  • Drain salmon can and pour contents into bowl. Mix well, making sure to mash any bones.
  • Chop onion, green onion and cilantro, add.
  • add oatmeal and eggs.
  • Add oil, salt and spices. Mix well.
  • Form into patties and put in greased baking pans.
  • Put in oven for 15 minutes. Flip. Bake for 10 more minutes. Patties are ready when brown. Take out of oven immediately. Serve warm or chilled.
