Instant Pot Recipe: Salsa Chicken Bowls

Ingredients
  

  • Whole chicken -- since the whole chicken I found at the supermarket was on the smaller side I actually got two of them to cook with and they both fit into my Instant Pot.
  • 1 large jar of salsa. I always look for salsa that is minimally processed because I like to eat clean.
  • Water - after you pour your salsa into the Instant Pot fill up the salsa jar with water and pour into Instant Pot

Instructions
 

  • Cut up chicken into pieces and place in Instant Pot
  • Pour in whole jar of salsa
  • Refill the empty salsa jar with water and pour it into Instant Pot
  • Put the top of the Instant Pot on and lock.
  • Set the Instant Pot on the High Pressure setting for Poultry and add 5 minutes (so it should be on for 30 minutes).
  • After it finishes cooking, let the steam out (quick release) and then open the Instant Pot.
  • Let it cool and then take the meat off the bone.
  • You can serve your Salsa Chicken as a burrito filling or in a burrito bowl. You can also use it in a quesadilla, taco salad - anything you want.
