Layered Rainbow Salad Platter - Great for Picky Eaters
My kids are very picky eaters, so I decided to try my hand at rainbow salad making. The best part? There are NO rules. Serve all the veggies you have in your fridge. You can't go wrong!
- Optional Cheese I served feta
- Orange Peppers
- Grape tomatoes or cut up tomatoes
- String Beans
- Slivered almonds
- Bagged Kale Salad optional
Peel and cut up each ingredient. Kids can help with this by washing veggies and if supervised, slicing up and arranging the veggies.
Arrange on a large platter with one food next to the other. You want to make it bright and pretty so your picky eaters get interested.
