Layered Rainbow Salad Platter - Great for Picky Eaters

Nancy Johnson Horn, The Mama Maven Blog
My kids are very picky eaters, so I decided to try my hand at rainbow salad making. The best part? There are NO rules. Serve all the veggies you have in your fridge. You can't go wrong!

Cuisine Salad

  • Lettuce
  • Optional Cheese I served feta
  • Avocado
  • Orange Peppers
  • Cucumbers
  • Grape tomatoes or cut up tomatoes
  • String Beans
  • Slivered almonds
  • Mushrooms
  • Bagged Kale Salad optional

  • Peel and cut up each ingredient. Kids can help with this by washing veggies and if supervised, slicing up and arranging the veggies.
  • Arrange on a large platter with one food next to the other. You want to make it bright and pretty so your picky eaters get interested.
