Garlic Lime Salmon Asparagus and Tomatoes

  • Preheat your oven at 425 Degrees Farenheit.
    Prep your salmon and place it on a lined baking sheet.
    I usually do tinfoil with parchment on top or a silicone baking mat.
    I usually cut a large piece of salmon up. This way I can control the portions (my husband eats more than my two younger kids).
    Then drizzle with some of the lime juice (a little more than 1/4 of the 1/2 cup you have) and place some sliced garlic on top.
    I always keep garlic cubes in my freezer, but recently I bought some fresh garlic and we've been using that all up.
    Then prep your veggies by washing them well and then spraying with olive oil spray (or drizzle with olive oil).
    I also added some lime juice (around a 1/4 of a cup) and some Mediterranean Seasoning. This recipe is that simple. Place in your oven for 15 minutes. Check if your salmon is done and your veggies are roasted. My asparagus wasn't quite done, so I took off the salmon and the tomatoes and put the asparagus back in for around 5-6 minutes. I served this with a air fried sweet potato - quick directions for that. Clean your sweet potatoes and spray or drizzle with olive oil. Place in your air fryer for 45 minutes at 400 Degrees Farenheit.
