No Bake Oatmeal Chocolate Chip Energy Bites

Ingredients
  

  • 1 cup organic rolled oats
  • 1/2 cup organic ground flaxseed meal
  • 1/3 cup maple syrup
  • 1/2 cup chocolate chips I used mini ones
  • 1/2 cup smooth peanut butter can substitute almond butter
  • 1 tbsp vanilla extract
  • Can also add in nuts cinnamon, raisins, etc..

Instructions
 

  • Add together all ingredients in a big bowl and mix. It will be very sticky - kids will love helping! Form into 1 inch (in diameter) balls using your hands.
  • Start making your balls by wetting your hands first.
  • Arrange the bites on parchment paper and freeze for one hour until set. Keep in the fridge for a week or so. They will be soft and easy to eat. And delicious!
  • If you are carb counting, it works out to 9.5 carbs per ball.
