Getting a date night is rare and babysitting can be expensive, so lately we’ve been actually trying to have Big Nights In. There might be chaos with our three kids running around, but we can hold hands (and pretend that it’s quieter). With work and life being so busy, weekends are really the only time we get to connect all together as a family. Although my kids are somewhat loud and spirited, my husband and I love to be with them. I enjoy cooking for them, so we did a Big Night in with a fantastic dinner and a movie recently and it was a success! I love Italian food and Italian-style cheeses, so instead of our usual recipes, I decided to make Pizza Fondue, which was one of my favorite recipes from my camp, Surprise Lake. Instead of making it over a campfire, I updated and made it with gourmet Parmesan & Romano Cheese by Stella® cheeses. The artisan cheese really “kicked it up a notch”, to quote Emeril (who I used to work with at the Food Network).
I picked up the Stella Cheeses Parmesan and Romano Blend. Stella cheeses are flavorful and combine old world craftsmanship with rich dairy heritage, dating back to 1923. Here’s how I made Pizza Fondue Dip.
- 1 container Stella Cheeses Parmesan Romano Blend
- 1 cup marinara sauce
- 1 large can plum or crushed tomatoes
- Bread to dip in (I used garlic toast)
- Chicken to dip in (I cut up fresh raw chicken, marinated in olive oil and a little lemon juice) and broiled it
- Add marinara sauce to pot
- Add cheese to pot
- Add tomatoes to pot
- Heat for several minutes and stir until melted.
I served it with pre-made garlic toast and broiled my own chicken. I served this with a salad.
I also brought out some cheddar cheese sticks for the kids to dip in.
