Here’s a easy (and delicious) way to help support Breast Cancer research! Perhaps you’ve heard of Shari Brooks of My Judy the Foodie? Shari’s blog honors her late mother (Judy) who tragically lost her fight against Breast Cancer 5 years ago. Shari takes her late mom’s recipes and basically went from kitchen-clueless (her words) to a confident cook. I swear by many of her recipes (she got my family to like Brussel Sprouts). But this month, my blog, along with several other blogs, are making Judy’s famous Banana Chocolate Chip Loaf to help Breast Cancer research. So, for each time Judy’s Banana Chocolate Chip Loaf is made and a picture is shared, a dollar is donated to the The Breast Cancer Research Foundation (BCRF)! And if you share on facebook and tag @bakeithappen, you could win an IPAD. This is a great cause and definitely NOT pinkwashing. Currently, 91 cents of every dollar spent by BCRF is directed towards lifesaving breast cancer research and awareness programs.
I’m not going to give you the recipe (you’ll have to go onto the Bananasforboobies.com website for that) but I will tell you that I made my version dairy free (since I am now lactose intolerant to milk – fun, right?).
I used Earth Balance Buttery baking sticks (which are vegan) and Tofutti sour cream. However, since I used eggs, the loaf I made was not vegan. I’m relatively new to being lactose intolerant, so any tips are requested.
My mother’s aunt Ella passed away from Breast Cancer in the 1990’s. She was in her mid eighties and decided not to seek treatment. She was a spunky lady and I always saw her when we’d go down to Florida to visit my grandmother.
So, in honor of Shari’s mom, my aunt Ella, and all the other families affected by Breast Cancer, let’s #BakeitHappen!
