No Bake Oatmeal Chocolate Chip Energy Bites

Serves: 18 bites
  • 1 cup organic rolled oats
  • ½ cup organic ground flaxseed meal
  • ⅓ cup honey or maple syrup
  • ½ cup chocolate chips (I used mini ones)
  • ½ cup smooth peanut butter (can substituteĀ almond butter)
  • 1 tbspĀ vanilla extract
  • Can also add in nuts, cinnamon, raisins, etc..
  1. Add together all ingredients in a big bowl and mix. It will be very sticky - kids will love helping! Form into 1 inch (in diameter) balls using your hands.
  2. Start making your balls by wetting your hands first.
  3. Arrange the bites on parchment paper and freeze for one hour until set. Keep in the fridge for a week or so. They will be soft and easy to eat. And delicious!
  4. If you are carb counting, it works out to 9.5 carbs per ball.
