Black Bean and Cheese Nachos

This vegetarian nachos recipe is super easy to make and only has 5 ingredients.
  • Organic Blue Corn Tortilla Chips
  • Cheddar Cheese (shredded) - we used white and yellow cheddar
  • Organic Grape Tomatoes, sliced
  • Rinsed can of black beans
  • Olive oil or coconut oil
  1. Coat pan with either olive oil or coconut oil so the nachos don't stick.
  2. Spread out the bag of blue corn chips
  3. Open a can of black beans and rinse under water.
  4. Spread beans on top of blue corn chips.
  5. Shred cheese and sprinkle on nachos.
  6. Cut up grape tomatoes and sprinkle on top.
  7. Bake for 12 minutes at 350 degrees until cheese is melted.
  8. Serve. You can add salsa, guacamole, or sour cream.
