Coconut Pineapple Rice: Perfect For Entertaining

Kids will like this Coconut Pineapple Rice because of all the glorious colors, adults will like it because it's delicious and healthy.
  • Veetee's Dine In Whole Grain Brown Rice - 2 packages
  • 1 yellow pepper
  • 1 orange pepper
  • ½ english cucumber
  • ½ bag frozen organic peas
  • ½ lime
  • Fresh ginger
  • 1 zucchini
  • 2 carrots
  • 1 can pineapple
  • 3 tablespoons shredded coconut. I was able to only find sweetened coconut, try to find unsweetened coconut
  • Coconut oil to taste (for sautéing)
  1. Get all your ingredients all ready.
  2. Heat up a frying pan with a tablespoon or so of coconut oil.
  3. Add veggies, and stir while sauteing.
  4. The order of the veggies really doesn't matter and you can use as many different veggies as you like.
  5. Adding the coconut and ginger will give it the flavor.
  6. Add the Veetee Dine In Whole Grain Brown Rice and stir.Then finish by add the lime and two pinches of salt to finish the dish.
  7. Serve with our Sesame Ginger Marinated Chicken.
