Creamy Dairy-free Carrot Soup

This creamy dairy-free soup gets it's rich taste from Almondmilk!
Ingredients
  • Carrots - 16 oz chopped (2 cups)
  • Chicken Broth (can substitute vegetable broth to make it vegan)
  • Thyme - a pinch
  • Black Pepper - a pinch
  • Olive Oil
  • Almond Breeze Almondmilk Original
  • Onion - ½
Instructions
  1. Take 2 cups of carrots and either finely chop or use a food processor.
  2. Take ½ onion and chop.
  3. Heat stockpot and add olive oil, spices, and onion.
  4. Saute until onion is soft.
  5. Add in broth and carrots.
  6. Bring to a boil and then simmer for 10 minutes.
  7. Transfer into blender and blend until smooth.
  8. Pour back into stockpot and add almond milk.
  9. Cook for a 5 minutes.
