Ever get a little bored serving chicken to your family? I try to vary the ways I serve it I serve a lot of chicken to my family, but sometimes it gets a little boring. I’m always trying to think up ways to make it interesting so I started thinking about a a greek style lemon marinade. I had used a lemon and olive oil recipe several years ago, so I figured I’d try something similar.
During my recent trip to Walmart, I checked out STAR’s new Usage Pairing Oils, which are a selection of three different extra virgin olive oils, each made from a different variety of label and each label designates which type of dish they pair with best.
There were three varieties offered, each made from different olives – how cool is that? Picual is made from picual olives and is best for beef and lamb with an intense flavor and a strong peppery finish. Hojiblanca is made from hojiblanca olives and best for poultry and fish – with a light, fruity taste. Arbequina is made from arbequina olives and is ideal for vegetables and salads because of its mild, smooth, slightly almond flavor, with touches of green apple and an aroma of olives in their peak of flavor.


Lemony Chicken with STAR Extra Virgin Olive Oil
Ingredients
Instructions
- Make marinade of lemon juice and olive oil.
- Whisk together.
- Marinate chicken in the marinade for 20 minutes.
- Broil chicken on Hi for 20 - 25 minutes (for chicken on the bone), 15 - 20 minutes (for a boneless breast).
- Serve with the side dish of your choice.
My Lemony Chicken with STAR Olive Oil was a hit — with my kids and husband loving it. This is definitely a marinade I will make again.
Fact: Olive oil can last for 2 years un-opened and 6-9 months opened. Remember to store in a cool, dark place.
